As long as the sensor can measure as fast as the head changes temp then accuracy of temp reading is more important then speed. This is it in a nutshell. I believe it can not measure as fast. The sensor is designed to be bathed in moving liquid. Sitting stagnant in air or paste hinders fast response. Link to comment
